Chicken Curry!


Want a Chicken Curry Recipe that is totally syn FREE!! Here you go I have an authentic recipe that is totally Delicious!


  • Chicken Breasts/Thighs
  • 2 Medium Onions
  • Tin of Chopped Tomatoes
  • Mushrooms
  • Pepper
  • tsp Cumin Seeds
  • 2 Green Chillies
  • 1 Garlic Bulb
  • Root Ginger – Thumbsize
  • 1 tbs Garam Masala
  • 1 tbs Turmeric
  • 1 tsp Salt
  • Fresh Coriander


  1. Get onions – Chop or grate fry in Fry light with Cumin Seeds till brown & add salt
  2. Add Chilli, Garlic, Ginger in mini chopper and blitz till chopped fine, add onions and cook till brown
  3. Mix in turmeric and then add tomatoes, mushrooms and pepper
  4. Dice the Chicken and add to the pot
  5. Give the curry a good stir and then add the Garam Masala and add lid
  6. Leave for 1/2 hour and then add the fresh coriander

This curry is great with lamb, prawns or simply vegetables!



The journey has begun! 

So week 1 has been and gone and I am pleased to say I lost 4 1/2lb. I am over the moon and the journey has now begun! 

So this week has been very lonely week. The other has been working in London Town, so been home alone! 😩

When your cooking for one, I always think what is the point, so I have been to my Nans for dinner which was far from slimming friendly, lovely but Beef in peppcorn sauce with buttered vegetables followed by a cream chocolate eclair, does not help the scales!

But I pulled it out the bag and I won #freefoodfeb which means I can now wear my brand new sparkling new apron whilst whipping up my slimming world delights! 

So that’s it back in the zone and food shop tomorrow so I don’t fall of the wagon whilst I am in a hungover state over the weekend. Celebrating quirksters birthday all day with the girls! Fabulous!

Lamb Cutlets with Moroccan Spiced CousCous & Mint Raita Slaw



  • Lamb Cutlets

Spiced Moroccan CousCous

  • Cauliflower CousCous/Rice
  • Lazy Garlic
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/2 tsp ground coriander
  • 1/2 tsp cayenne
  • 1/2 tsp paprika

Mint Raita Slaw

  • Red Cabbage
  • White Cabbage
  • Carrot
  • Red Onion
  • Cucumber
  • Coriander
  • 1 tsp Mint Sauce
  • 1/2 Lazy Garlic
  • Natural Fat Free Yogurt
  1. Season the Lamb Cutlets with salt and pepper and spray with fry light on a baking tray.
  2. Add all the spices in a mixing bowl and add the cauliflower couscous mix and then pour on to grease proof paper on a baking tray
  3. Place lamb and Couscous in the over – pre heated at 180 cook for 20 mins or to your lamb preference
  4. Shred all the slaw vegetables or thinly chop and set aside.
  5. In a mixing bowl dice cucumber, add garlic, mint sauce and natural yogurt mix and add the shredded slaw vegetables and add coriander (to taste)
  6. Plate up and enjoy!


So as you were all aware I have joined Slimming World for the millionth time and I am determined this time to make sure I stay in plan……

Week 1 = Failure.

Everyone knows  I love a Friday after work pub session but this week I was determined that I was swapping the fizz for a focused dieting weekend.

Well that went totally to pot. I had a 5 minute conversation with the other half at 4.35pm on Friday, 5.10pm I was in the pub sinking a glass of Pinot a large glass…. followed by another large glass and another and another, then a jaeger then a vodka and diet coke (pat myself on the back)… Absolutely hopeless.

Totally deflated when I got up on Saturday and with horrendous hangover kicking in, I needed to raid the fridge, so with as stumbled in to the kitchen opened the fridge, really wanted a bacon sandwich, but settled for a syn free brunch – Cajun Chicken, Orzo Pasta Salad, Spinach and Celery!


Headed back to bed for 3 hours of pure Disney and a snooze!

Dinner time was another success – Slab of meat and some veggies! – Still trying to cancel out the wine from Friday…



Couple of great films we watched and would recommend – Passengers and Hidden Figures. Brilliant films, really good watch. I don’t do scifi, aliens, ufos but this time I was impressed and Hidden Figures based on a true story – 10/10

Sunday is meant to be a day of rest, not for me.. Up early, breakfast cooked, washing done, food shop and dinner done.  I am not a massive fan of Sunday Dinner, I always cook it and when it comes to eating it, two mouthfuls and I am done. So I went for lamb cutlets, Moroccan spices cauli couscous and mint raita salad…. Bloody Marvellous!


I will pop the recipe on another post so you can try it for yourself.

SO now time to chill. Ready for another working week and another weekend on the pop – celebrating one of my favourites birthdays. Cant wait for a day with the girlies!

Chicken Ratatouille

Little recipe for all you slimmers! 

Another easy recipe packed with speedy goodness!


  • Chicken Fillet
  • Tinned tomatoes
  • Chicken stock – 100ml
  • Courgette 
  • Mushrooms
  • Onions
  • Pepper
  • Chilli flakes
  • Worcestershire sauce
  • Salt and pepper
  • Garlic
  • Mixed herbs

So take all your vegetables, cut them how you like. I do mine chunky so they hold their shape, add to a pan sprayed with dry light, cook on a medium heat for about 5mins add the garlic, herbs, Chilli, Worcestershire sauce and season. Cook for a further 5mins then add the tomatoes and chicken stock, add the diced chicken and then dinner till sauce reduces and chicken is cooked.

Serve with pasta, rice or jacket! 

Syn free! 


I’ve being dieting all morning…. Am I skinny yet!

So its that time again…. Slimming World Time.

No matter how may times we try we always slip back into our old ways and eat everything in sight in 60 seconds flat…

I am back on that wagon and this time I am hopefully strapped in – TIGHT!

So day one, has been great. Food Diary complete, shopping in the fridge, meal plan done and I am thinking about the Chip Shop!!!! Hahaha –  that was a joke by the way.

Anyone who has done Slimming World before will know about the wonderful gems that are ScanBran, the fibre overload stomach fillers. Its hard to imagine that you are eating a lovely slice of crusty bread covered in butter, but smothered in philly and parma ham they are lovely and super filling.

With lunch being leftovers from last night. Pulled Pork Chilli and Salad and fruit salad with natural yogurt.

Swapped normal rice for Cauliflower Rice, which is nice BUT you do have to cover it in herbs or spices. Its very very bland and can turn really soggy. Nice though and some extra speed food wouldn’t harm.

A slow cooker is an actual god send. Whack everything in and leave it. Jobs a gooden.

Pork Loin, Chilli Kidney Beans, Tinned Tomatoes, Mushrooms, Onions, Peppers

In the Slow cooker for the day, turn off an hour or so before you want to eat, shred the pork and serve! Lovely!!

Finished the day on 6syns and happy and full.

I ho I ho, it’s off to work I go!

Day 1 back at work = done! 

To be honest it wasn’t so bad, I think the 13 hours sleep 😴 helped a lot.

After arriving home yesterday I was absolutely shattered, whipped up a lasagna and then got my jammas on, was in bed for 7. 

After I had caught up with Apple Tree Yard, The Moorside. What two great programmes! Loved them both definitely worth a watch. 

So waking up to a quite a mild morning wasn’t to much of a bad start to the day. I was expecting rain, minus cold and ice, so was surprised but definitely not show off your brown legs weather 😩

Tonight it’s going to be the same,put a slimming world stew in the slow cooker this morning which was lovely to know I didn’t have to cook when I got home from work.

Cases are still full of dirty washing, wet swimming costumes and sand but that can wait for the weekend, I am not even attempting to sort that out. Isn’t that the worst job in the world, the unpacking and the mountain of washing that you have to do, I hardly wore half the things I took but I am that bone idol I’ll wash the lot so I can throw it in all together!! Hahaha! 

Anyway back to the stew!

So easy to make!

Braising steak, two leeks, onion, carrots, parsnips and a handful of new potatoes, beef stock cube, salt and pepper, loads of Worcester sauce, mustard powder and some parsley! 

Bung it in the slow cooker, turn it on low and leave till got home from work! Easy and syn free!

Had it with mash and some cabbage and broccoli, nice to get some greens after two weeks off…
