Chicken Ratatouille

Little recipe for all you slimmers! 

Another easy recipe packed with speedy goodness!


  • Chicken Fillet
  • Tinned tomatoes
  • Chicken stock – 100ml
  • Courgette 
  • Mushrooms
  • Onions
  • Pepper
  • Chilli flakes
  • Worcestershire sauce
  • Salt and pepper
  • Garlic
  • Mixed herbs

So take all your vegetables, cut them how you like. I do mine chunky so they hold their shape, add to a pan sprayed with dry light, cook on a medium heat for about 5mins add the garlic, herbs, Chilli, Worcestershire sauce and season. Cook for a further 5mins then add the tomatoes and chicken stock, add the diced chicken and then dinner till sauce reduces and chicken is cooked.

Serve with pasta, rice or jacket!

I’ve being dieting all morning…. Am I skinny yet!

So its that time again…. Slimming World Time.

Noย matter how may times we try we always slip back into our old ways and eat everything in sight in 60 seconds flat…

I am back on that wagon and this time I am hopefully strapped in – TIGHT!

So day one, has been great. Food Diary complete, shopping in the fridge, meal plan done and I am thinking about the Chip Shop!!!! Hahaha – ย that was a joke by the way.

Anyone who has done Slimming World before will know about the wonderful gems that are ScanBran, the fibre overload stomach fillers. Its hard to imagine that you are eating a lovely slice of crusty bread covered in butter, but smothered in philly and parma ham they are lovely and super filling.

With lunch being leftovers from last night. Pulled Pork Chilli and Salad and fruit salad with natural yogurt.

Swapped normal rice for Cauliflower Rice, which is nice BUT you do have to cover it in herbs or spices. Its very very bland and can turn really soggy. Nice though and some extra speed food wouldn’t harm.

A slow cooker is an actual god send. Whack everything in and leave it. Jobs a gooden.

Pork Loin, Chilli Kidney Beans, Tinned Tomatoes, Mushrooms, Onions, Peppers

In the Slow cooker for the day, turn off an hour or so before you want to eat, shred the pork and serve! Lovely!!

Finished the day on 6syns and happy and full.

I ho I ho, it’s off to work I go!

Day 1 back at work = done! 

To be honest it wasn’t so bad, I think the 13 hours sleep ๐Ÿ˜ด helped a lot.

After arriving home yesterday I was absolutely shattered, whipped up a lasagna and then got my jammas on, was in bed for 7. 

After I had caught up with Apple Tree Yard, The Moorside. What two great programmes! Loved them both definitely worth a watch. 

So waking up to a quite a mild morning wasn’t to much of a bad start to the day. I was expecting rain, minus cold and ice, so was surprised but definitely not show off your brown legs weather ๐Ÿ˜ฉ

Tonight it’s going to be the same,put a slimming world stew in the slow cooker this morning which was lovely to know I didn’t have to cook when I got home from work.

Cases are still full of dirty washing, wet swimming costumes and sand but that can wait for the weekend, I am not even attempting to sort that out. Isn’t that the worst job in the world, the unpacking and the mountain of washing that you have to do, I hardly wore half the things I took but I am that bone idol I’ll wash the lot so I can throw it in all together!! Hahaha! 

Anyway back to the stew!

So easy to make!

Braising steak, two leeks, onion, carrots, parsnips and a handful of new potatoes, beef stock cube, salt and pepper, loads of Worcester sauce, mustard powder and some parsley! 

Bung it in the slow cooker, turn it on low and leave till got home from work! Easy and syn free!

Had it with mash and some cabbage and broccoli, nice to get some greens after two weeks off…

Home sweet home. ๐Ÿก

So today we go back to sunny Coventry! Two weeks has passed and I have had the most amazing time.

I am surprised that the time has gone steady, normally two weeks flies by, we were talking last night and we are defiantly going to look at booking for 3 weeks for next year – if I can with work, so we will see.

Last night we went back to Cafe Fiori for our last meal… chicken tenders and belly pork!

Back to the Skylark today for the last few hours of sun and some lunch then to do the dreading packing. To be honest I hardly take things out the case, of course the easy crease items but everything can stay put.

The holiday has been great and I have enjoyed every minute!

Next break is in May – Vegas for 7 days! Let’s see what that has to offer!

Hangover – ย pt 2 ๐Ÿ˜ฉ

So yesterday was a hungover blur and with only two days left totally waste of a day! 

We went to the high brunch at the Hard Rock Hotel on Saturday which was fabulous! Paid ยฃ15 each and had unlimited cocktails and beers and fabulous lunchtime buffet and if you want to go the ยฃ18 package you could have unlimited campagne, which I took full advantage of from 12.30 till 4pm. 


Great day but gets very very busy. If you want to get a good spot then you need to head there about 11am but a lot of the beds were saved by towels from the guests of the hotel.

We then headed up to the Saturday night market, I love it there it’s great market and has such a fabulous atmosphere. I would says it’s definitely a must when your here!

The choice of stalls, bars, the food stands cover everything from Indian traditional dishes, Mexican, pizza, cakes, ice cream and my favourite Chicken Shawama! The queue is always crazy for this stand but for 4 quid it’s bloody lovely!


We stayed till 4am in the bar which had a DJ  and was jam packed… definitely a place to visit.

So yesterday consisted of a late alarm call, jumped on the bike and visited the Sky Lark Beach Shack on Baga Beach, in my opinion the best food served on the beach. 

English Sauasge and Bacon with fried onions in a crusty roll… SUPER! ๐Ÿฅ–๐Ÿฅ“

Then back to the hotel for a snooze and to Cuba Bar for Sunday Lunch. We had chicken and beef, mash, roasts, loadsof different  vegetables  and the biggest Yorkshire ever!!!! 

For 500 rupees each it was lovely, they serve after 3pm on a Sunday and some times you have to book as they sell out.

Hangover in 31 degrees heat, isn’t the best idea but I had a great day so 10000% worth it.

Carrot ๐Ÿฅ• oil is out and I have two days to turn into a golden brown beach goddess!! ๐Ÿ˜‚๐Ÿ˜‚๐Ÿ˜‚๐Ÿ˜‚

Not rocking my world…๐Ÿ˜ฉ

Today has been spent at the Hard Rock Hotel… well I have to say my world has not been rocked.

Arrived around lunch time checked in, room wasn’t ready so headed to the pool for a drink and sunbathe, room was ready a couple of hours later, ventured up. Room is nice, but only nice ยฃ120 a night I was expecting something a bit better, but I suppose you are paying for the brand. 

Lovely bed, mattress is great definitely sleep well tonight, but it feels to much like a hotel, if that makes sense! 

Back round the pool had a spot of lunch which was great we went for the beef burger and I had a chicken ceaser salad and the service was brilliant really attentive and quick!

The pool is fabulous aswell!

But that’s where that finishes….. 

Headed to the restaurant for dinner, found some where to sit where we waited for 20 mins for a someone to even ask if we wanted a drink or bring a menu!!! 

Then to be asked out room number 4 times by 3 different people, still no drink or menu!

When we finally had a look, very big menu but nothing that stood out. So we had soup for starters.

Grilled chicken with mash and garlic spinach, he didn’t moan so must have been okay! 

I went for garlic Mushroom tagatelli pasta with chicken, the cream had split, 3 little bits of chicken and 2 mushrooms, sent it back and asked for it to be taken on the bill, 15 mins later another bowl of pasta turned up, last thing I wanted to see. Got sent straight back.

The bill came with added drinks and drinks that were added by accident, so had to go threw it and check everything off! Not good.

I am not sitting in the bar watching a cracking band and starving! Early night ready for the pool party tomorrow, let’s hope it’s better than tonight’s drama!

Mama Mia…

Well I booody never, an authentic Italian restaurant in the middle of Goa…

Well guess what we found it!! 

Ciao Bella a lovely restaurant on the beaten track, hidden away in the darkness, a beaken of Italian glory!! 

๐Ÿ˜‚๐Ÿ˜‚๐Ÿ˜‚๐Ÿ˜‚๐Ÿ˜‚ I am actually laughing writing that! What a creative writer! 

Anyway back to this Italian gem! It was gorgeous!

And it happened to be Pizza Night!! And that’s what we had… 

Italian buffalo mozzarella, Italian sundries tomato, smothered on ITALIAN PROCHUITTO! It was as bloody amazing! 

The starter was also a winner! Potato croquettes with tempura vegetables.. what a delight. Something I would never had before and I will be defiantly be making those back home! And to wrap it off a lovely large glass of Italian grape – Pinot Grigio! 

Lovely evening all round!

Today has been a beach day! Relaxing for the day….

Before we head up to the Hard Rock Hotel tomorrow for cocktails and pool party Saturday, which has unlimited drink from 12 till 4 and that’s including champagne 

Winner winner chicken dinner!
